You’ll love how simple this recipe is! Grab your skillet (with a lid) and get to cooking.

You’re going to brown your meat and veggies, add some spices, cook your pasta and done! Super easy, right? What makes this dish fun is how you can sub pretty much any of the ingredients too. Don’t like beef? Use ground chicken or turkey. Don’t like beef broth? Use chicken or veggie. Want to make this even more homemade? Use your own homemade broth.

If you want to add broccoli to this dish, wait until the last 3 or so minutes to add your broccoli to the cooking pasta. Or defrost the broccoli in the microwave using frozen broccoli, chop into smaller, bite-sized pieces and add right before you add your cheese. Cauliflower or chickpeas would be delicious as well!

We use mild cheddar with this recipe, but it’s also delicious with sharp cheddar, parmesan, Gouda and more.

Ingredients
  

  • 1 pound ground beef
  • 1/2 cup onion diced
  • 1/2 cup tri color peppers diced
  • 2 cups beef broth low sodium
  • 2 cups whole milk
  • 16 oz macaroni noodles
  • 16 oz tomato sauce
  • 1 tbsp minced garlic
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp parsley flakes
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups mild cheddar

Instructions
 

  • Brown the ground meat. peppers, and onions together. Drain excess grease or use a paper towel to blot.
  • Once browned, add spices.
  • Stir to mix, then add in broth, sauce, milk and pasta.
  • Bring to a boil then turn heat down to simmer.
  • Cover with a lid and cook for 12-15 minutes, until pasta is done. Stir occasionally to ensure pasta doesn't clump together.
  • Remove lid when done, stir in cheese, allow to melt and enjoy!

Notes

Feel free to substitute your protein by using any ground meat or leave it out entirely and use a vegetarian protein. Follow the directions on the plant protein package and add at the end. 
Use any broth flavor you enjoy. I use low sodium organic chicken broth as we follow a low sodium diet. 
Taste and adjust the spices before you serve. We enjoy smoked paprika and a lot of garlic, but other's don't. Feel free to leave out the salt if you're following a salt-free diet. 
I've subbed unsweetened almond milk in place of whole milk and it was just as delicious. 
This meal is freezer friendly. Allow to cool then place in an air-tight container for up to 2 months. To defrost, place in the refrigerator the night beforehand and gently warm it on the stove.
