Growing up Southern, pound cakes were always at every family gathering and church potluck. I can’t tell you when I tried pound cake for the first time. I’m sure I was super young. But I can tell you that I’ve never met a pound cake I didn’t love! What’s wonderful about this recipe & the majority of pound cake recipes, is that they’re so incredibly simple. Typically only using a few pantry staples that are super affordable, Banana Chocolate Chip Pound Cake is a dessert that can be made and served anytime.
Throwing a backyard BBQ or baby shower? Make a pound cake! Having friends over for brunch or a dinner party? Make a pound cake! Not only is it delicious as is, it’s also fantastic served with ice cream (yum!) or layered into one of my absolute favorite desserts- a trifle!
If you haven’t ever had a trifle, you need to remedy that ASAP. Layers of cake, fruit, pudding & whipped cream come together to create dessert perfection. This Banana Chocolate Chip Pound Cake would be fantastic with bananas, strawberries and blueberries. Yum!!
¾ cup butter, softened
1 cup sugar
2 egg yolks
1 ripe banana
½ tbsp almond or vanilla extract
1 ¾ cups flour
¼ tsp salt
1 cup chocolate chips (you can use Semi-Sweet/Milk Chocolate/Vegan)
Preheat the oven to 325 degrees. Grease a 9 inch loaf pan.
Using a stand mixer, beat butter and sugar for 5 minutes or until fluffy.
Slowly, add in eggs, egg yolks, banana, almond or vanilla extract. Beat until incorporated, about 3 minutes.
Add in flour, a little at a time. Beat on low, until batter is combined.
Fold in chocolate chips.
Spread batter into the prepared loaf pan and bake for 45-60 minutes or until a toothpick inserted comes out clean.
Cool for 20 minutes and then remove from the pan.
I like to serve it warm with a tab of butter.
Note: I love adding almond extract to desserts, but I know some may not like that. Vanilla works perfectly in this recipe as well.
