This Vegetarian Mushroom Pâté is a wonderful addition to your charcuterie board! The mushrooms are a wonderful substitute for meat and are so hearty. You’ll love this vegetarian appetizer!
Vegetarian Mushroom Pâté

I LOVE mushrooms. No lie, I could eat them everyday. Sautéed, raw, in sauces, blended into dishes, sliced into soups, stuffed as an appetizer.. You name it, I’ve tried it and enjoyed it! Chris doesn’t share my enthusiasm for mushrooms, but he will gladly try them if I ask. He’s a great sport like that!

What’s the difference between this and traditional? 

I’ve tried pâté before and wasn’t wild about it. But this version isn’t exactly like the traditional pâté since it isn’t made with liver. No thank you to the liver. I’ll pass! But this alternative is amazing! If you’ve ever wanted to try pâté, but weren’t a fan of the ingredients, this is the recipe you need to try asap!

How to Serve

What’s fun about this recipe is that it is absolutely delicious on its own! I’m not kidding when I say I could eat it with a spoon. But it’s delicious on toast points or cucumber slices. I love it as a delicious part of a charcuterie board with crispy veggies & almond crackers. It would even be delicious slathered on baked chicken!

Vegetarian Mushroom Pâté

16 ounces of sliced mushrooms (they don’t all have to be sliced but it will help the food processor)
3/4 cup cashews
1 Tablespoon ground flaxseed
1 egg
1 Tablespoon Italian Seasoning
2 teaspoons garlic powder
2 teaspoons salt

Combine all ingredients in a food processor and process on high until a soft mixture has formed. You may need to add up to 1/4 cup of olive oil or water for the mixture to really form.
Slowly pour it in. Then pour your mixture into a mini cast iron skillet. Dust with parmasan cheese if you would like and bake at 400 for 10 minutes. This will create a crust on top of the pate and ensure the egg is cooked within the pate.

Serve on a charcuterie board with crunchy veggies and crackers. We love almond crackers on our charcuterie boards! Perfect vegetarian option or vegan option for your friends this holiday season. You can swap out the cheese for vegan cheese, and the egg for a flax seed, egg or coconut oil.
