Ingredients for Slow Cooker Sweet Potato Casserole

Putting this sweet potato casserole together in the slow cooker requires many of the same ingredients as a traditional casserole recipe. So, to make your own slow cooker sweet potato casserole, you’ll need:

Sweet potatoes
Butter
Heavy cream
Eggs
Brown sugar
Cinnamon
Marshmallows

While the ingredient list for this slow cooker recipe is similar to the traditional version of sweet potato casserole, the preparation of this side dish is a little bit different.

How to Make Slow Cooker Sweet Potato Casserole

To make this simple holiday side dish, start by preparing your sweet potatoes. So, you can cook them any way you like, just make sure they’re completely cooked to add them to your casserole. Two of my favorite ways to prepare my sweet potatoes are:

Microwaving them. To microwave your sweet potatoes, use a fork to punch a few holes in the potatoes, then place them on a microwave safe plate. Also, cook on high for five minutes, flipping the potatoes halfway through the cook time. Allow the potatoes to cool enough to touch, then scoop out the filling.

Steaming them. Steam your sweet potatoes by peeling and dicing the sweet potatoes. Place them in a steam basket over boiling water. Cover the basket and cook the potatoes until tender, around 15 minutes.

After the sweet potatoes are cooked through, use a masher to mash the potatoes until smooth. Combine the mashed potatoes with melted butter, heavy cream, eggs, brown sugar, and cinnamon. Mix all the ingredients until they’re smooth and well combined.

Grease the bowl of your slow cooker with nonstick cooking spray, then spread the sweet potato mixture in an even layer in the bowl. So, set the slow cooker to cook on low, place the lid on, and cook for around four hours.

When you’re ready to serve your sweet potato casserole, sprinkle the marshmallows on top of the sweet potatoes and place the lid back on. Also, keep an eye on the casserole, giving the marshmallows just enough time to melt before serving the dish – around five minutes is all you’ll need. Once the marshmallows are melted, you can scoop out your sweet potato casserole and serve it to your guests.

Slow Cooker Sweet Potato Casserole

Makes 5 servings

Prep time: 10 minutes

Cook time: 4 hours

Ingredients:

4 sweet potatoes, cooked and mashed

¼ cup butter, melted

Heavy cream ¼ cup

2 eggs

¼ cup brown sugar

1 teaspoon cinnamon

2 cups marshmallows

Instructions:

1. Add the sweet potatoes to the bowl of the slow cooker.
2. Then, mix in the butter, heavy cream, eggs, brown sugar, and cinnamon. Stir to combine.
3. Place the lid on the slow cooker and cook on low for four hours.
4. Immediately before serving, top the sweet potatoes with the marshmallows. Place the lid on the slow cooker and cook for 3 to 5 minutes, until the marshmallows begin to melt. Also, serve immediately.
