Zesty Shrimp Salad

I could eat shrimp every single day, no lie. My favorite thing to do when I’m home in Savannah is pick up fresh shrimp, but since living in Minnesota that isn’t really an option. So excited to be able to able to pick up fresh seafood again in Virginia though!

This super simple salad doesn’t take too many ingredients and is put together in a snap. The great thing about shrimp is how quickly it cooks too! There is barely any time at the stove so you don’t have to heat up your whole house cooking. Win win!

Zesty Shrimp Salad

Serves 2
Ingredients

For the zesty shrimp:
½ Pound shrimp, peeled and deveined
2 Tbsp olive oil
Juice from 1 lemon
1 Tbsp paprika
1 Tsp garlic powder
½ Tsp chili powder (optional)
Salt and pepper to taste

For the salad:
3 Cups salad mix
½ Avocado, sliced
1 Cup cherry tomatoes, halved
Salt and pepper to taste

Directions:

Prepare the zesty shrimp: In a bowl combine the olive oil with the lemon juice, paprika, garlic powder, chili powder and salt and pepper. Add the shrimp and toss to combine so the shrimp gets well coated with the marinade. Let it marinate for 5 minutes.
Meanwhile, heat a large pan over medium-high heat. Transfer the shrimp to the pan and cook for 3 minutes per side or until done. Remove from the heat and set aside.
Assemble the salad. Start by arranging the salad grings in a bowl. Top with the avocado, cherry tomatoes and zesty shrimp. Sprinkle it with salt and pepper. Once you are ready to serve it, top it with avocado crema.

Avocado Crema Dressing

Ingredients:

½ Avocado
¼ Cup sour cream
Juice from 1 lemon
Salt and pepper to taste
1 Tsp garlic powder

Directions:

Place all the ingredients into a bowl. With the help of a fork press and mix until evenly incorporated.
