I had never hear of Whoopie pies until I was 15 and my best friend and carpool buddy Kelly introduced me to them. She had told me they were a popular treat in Maine, where she had family and my mind was blown.

A  cake like cookie with frosting sandwiched in the middle?? Indeed this was sent from Heaven! I couldn’t get enough. I remember asking her if her mom could make them all the time. HA Moderation wasn’t a word I knew and implemented in my life at 15.

Now I’m in my 30s and I still enjoy the occasional Whoopie pie!

In moderation at this point. This recipe is easy to make and so good! It only needs a handful of ingredients, many that are found in your pantry.

Flour, baking powder, ginger, molasses & buttermilk and a few other ingredients combine to make the most delicious Whoopie pies! You can make your own cream cheese frosting if you have the time, which is so delicious. If you don’t have the time you can use a store bought frosting. Just whip it a bit & add a tiny bit of allspice to get that delicious homemade like flavor!

You really can’t go wrong with this recipe and I know you’ll love it as much as we do.

You should be able to find all of these ingredients at your local grocery store, but if you can’t, Amazon carries a lot of them! MolassesChristmas sprinkles & more can be found online.

Gingerbread Whoopie Pies with Homemade Cream Cheese Frosting

Cupcake Ingredients:

2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
2 teaspoons allspice
1 teaspoon ground ginger
1/2 teaspoon salt
1 1/2 sticks of softened butter
1/2 cup light brown sugar
1/2 cup buttermilk
1/3 cup molasses
1 egg
Holiday sprinkles if desired.

Frosting Ingredients
2 sticks room temperature unsalted butter
4 cups confectioners’ sugar
1/2 cup room temperature cream cheese
1/4 cup half and half
1 teaspoon allspice

Directions For Whoopie Pies:

Preheat oven to 350 degrees.
Step 1: In a mixing bowl, add flour, baking soda, baking powder, salt, and ginger. Whisk dry ingredients together.
Step 2: In a small bowl, cream together the brown sugar and butter until light and fluffy. Mix in egg.
Step 3: Mix in the buttermilk and molasses. Once incorporated, slowly mix in the dry ingredients.
Step 4: Line a baking pan with parchment paper or a silicone baking mat.
Step 5: Using a spoon or ice cream scoop, drop 1” balls onto your baking pan. Bake for 10-12 minutes or until they spring back. Cool on a wire baking rack.

Directions For Frosting Filling:
Step 1: Beat cream cheese and butter for 1 minute or until light and fluffy.
Step 2: Add half of the creamer and slowly add in the confectioners’ sugar, 1/2 cup at a time until light and fluffy. If mixture is too thick, add more creamer, 1 tablespoon at a time. Add allspice and incorporate completely. Pipe or spoon filling onto a whoopie cookie and top with a second cookie. Now you have a whoopie pie! If desired, roll in holiday sprinkles.
