Sharp Cheddar Cheese Puffs (or gourgères) are a delicious appetizer or after school snack that are perfect for light snacking. They are light, fluffy, and full of cheese flavor!

Ingredients

  • 1 1/4 cup water
  • 1/4 cup butter
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 1 1/2 cups flour
  • 4 eggs room temperature
  • 1 cups sharp cheddar cheese plus more for topping (optional)
  • 1 tablespoon Dijon mustard

Instructions

  • Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
  • In a medium saucepan, add the water and butter. Heat the water over medium heat until it begins to boil.
  • Add the salt, paprika, cayenne, and flour and stir to mix until a smooth ball begins to form.
  • Stir in the shredded cheese.
  • Transfer the dough to a bowl and add the eggs, one at a time, beating between each addition.
  • Stir in the Dijon mustard.
  • Use a tablespoon or small cookie scoop to scoop out the dough onto the prepared baking sheet. Sprinkle a small amount of shredded cheese on top of each puff, if desired.
  • Bake for 20 to 25 minutes, until golden brown.
