I love sweet potatoes. I love them baked, fried, mashed… You get the gist. The other day I had a craving for nachos, but didn’t want to feel gross after eating too many tortilla chips. Enter: the sweet potato. Sliced nice and thin, baked for 15 minutes, topped with some veggies and cheese, then broiled for 2 minutes… They were delish y’all. I wish I had ordered (used Instacart-such a lifesaver!) more than one. Emms is teething, so he thoroughly enjoyed gnawing on a raw slice while the others were cooking.
