This healthy snack idea is honestly a perfect dish anytime of the day! While I enjoyed it as a snack, you can easily serve it as a light appetizer or triple the recipe and make it for dinner. Have a craving in the morning? Make it for breakfast and top it with a fried egg or two. That yolk would soak in beautifully to these baked sweet potato slices.

You can make this healthy dish ahead, skip the toppings and save it for later as well! I wouldn’t recommend adding the toppings, like sour cream or guacamole, if you plan to make it ahead until you’re ready to eat it.

How do I make this healthy sweet potato snack?

 

You’re going to love this healthy sweet potato snack! While it isn’t low carb because of the sweet potato base, it is much healthier and lower in sodium than using chips. Since you’re slicing this sweet potato so thinly, it cooks up quickly and evenly as well. Snack time win!

Make sure to wash, peel and slice up your sweet potatoes before you begin. You’ll want to ensure the slices are even so it cooks up correctly. I used a mandolin slicer to get each piece the same thinness, which definitely ensures an evenly cooked ‘chip’.

I prefer to just use an oil spray, but I have used melted coconut oil in a pinch to drizzle over the sweet potato slices before popping them in the oven. Make sure to sprinkle salt, pepper, and whatever other spices you like on top before cooking them! Homemade Taco seasoning would be fabulous on these!

What to top these Healthy Sweet Potato Nachos with?

The sky’s the limit for topping these healthy sweet potato nachos with! You can use a variety of cheese, like cheddar, mozzarella, gouda, gruyere, and more. Pepper Jack is delicious and I always love a sharp cheddar on these too.

Whatever you put on your usual nachos you can put on these, from cooked chicken, roasted chickpeas, cooked shrimp or black beans for protein. I love to top them with diced onion, sweet vidalia or red, as well as olives and guacamole. If you have fresh cilantro on hand, definitely make sure to add it as well! Always so delicious.

Healthy Sweet Potato Nachos

Course Snack

Ingredients
  

  • 1 large Sweet Potato
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tbsp oil OR olive oil spray
  • Nacho Toppings of Choice

Instructions
 

  • Preheat the oven to 350. Wash, peel and slice up your sweet potato.
  • Spray your baking sheet, lay the sweet potatoes down.
  • Spray the tops of your sweet potatoes, sprinkle with salt and pepper.
  • Pop in the oven for 15 minutes.
  • When tender, pull them out. Top with your favorite nacho toppings- onions, olives, cheese, etc.
  • Put back in the oven, broil for 2-3 minutes. It's just enough to get the cheese to melt!
  • Pull out, plate, top with salsa, guacamole, and sour cream.
  • Enjoy!

Notes

This recipe can easily be doubled, tripled and more. Just use multiple sweet potatoes. 
I used a mandolin slicer to get these sweet potato slices nice and thin. It cuts down on prep time and ensures even slices every time!
